The flavorful recipes developed during her culinary travels are perfect for foodies looking for quick and easy meals that take less than 30 minutes to prepare.
Follow the preparation of the dish and the two soups that Elvira Masson prepared for us especially for Shabbat. On the menu: Kuku sabzi, an Iranian recipe that looks like an herb omelette. You will also discover a recipe for red lentil soup and split pea soup, Romanesco cabbage to add color and vibrancy to your plates!
Receipts:
Kuku sabzi, for 4-6 people – 10-13 personal points:
INGREDIENTS:
- 5 c. olive oil
- 1 bunch flat-leaf parsley
- 1 bunch of coriander
- 1 bunch of dill
- Mint
- 1.5 tbsp. baking powder
- 1 C. teaspoon fleur de sel
- 1/2 tsp. ground turmeric coffee
- 4 turns of a pepper mill
- 1 C. flour
- 8 large eggs
- 50 g of feta or ricotta
- 1 pinch of harissa or 1 pinch of ground chili
- 100 g of walnuts
- 100 g dried cranberries (or better, in Iranian grocery stores: barberry)
Coral lentil soup, for 4 people – 15-18 personal points:
INGREDIENTS:
- 1 onion
- 2 cloves of garlic
- 1.5 cm piece of ginger
- 2 tbsp olive oil (or coconut oil)
- 1 pinch of chili flakes
- 3 pinches of curry
- 2 pinches of turmeric powder
- 150 g of coral lentils
- 400 ml tomato pulp
- 400 ml of coconut milk
- A small handful of fresh cilantro (leaves and stems)
- salt
- Ground pepper
Split pea soup, romanesco cabbage, for 4 people – points for 2 to 4 people:
INGREDIENTS:
- 100 g of crushed peas
- 1/2 small romanesco cabbage
- 2 cloves of garlic
- 1 small onion
- 1 C. c. cumin powder
- Juice of half an orange
- 3 tbsp. at s. olive oil
- 100 cl of water
- Salt pepper
