Ingredients

1 C. butter
– 1 onion, chopped
– 2 garlic cloves, chopped
– 1 cup of dried green lentils
– 4 cups of beef or chicken broth
– 1 C. ground cumin
– 3 cups carrots, chopped
– 2 cups of milk
– 4 cups fresh spinach, chopped
– Salt and freshly ground pepper to taste
– Croutons, to taste
– Flat-leaf parsley or coriander to taste

Preparation

STEP 1

Heat a pot or pan over medium heat and cook the onion and garlic for 2 minutes. Add the lentils and continue to cook for 2 minutes. Add stock and cumin and season. Bring to a boil, then simmer for 20 minutes.

STEP 2

Add the carrots and simmer for 15-20 minutes or until the carrots and lentils are tender. Add the milk and spinach and simmer for 2 minutes. Garnish bowls with croutons and parsley or cilantro, if desired. To serve.
