There’s nothing better than lounging under a blanket in the fall when it’s cold outside. a Must, is to be warmed up with a very hot soup full of vitamins. Here are some seasonal vegetable recipes that we highly recommend.
Pumpkin
Pumpkin is a great autumn classic. The recipe is quick and easy and will fill you with positive emotions.
Ingredients for 4 people: 1 pumpkin, 2 potatoes, 2 chopped onions, 3 garlic cloves, 1 tbsp curry, 1 chicken stock, 1 pinch of nutmeg, salt and pepper.
Recipe: Remove the skin and seeds from the pumpkin (peeling is not mandatory, but in this case choose a mild one and wash it well), then cut the flesh into large pieces. Peel the potatoes and then cut them into large pieces.
Brown the chopped onion and garlic in a little butter over low heat. Add potatoes and pumpkin, fry for 5 minutes. Cover everything with water, add chicken stock (crushed) and spices. Let it simmer on low heat for about 30 minutes.
When the vegetables are soft, stir the preparation. Check the seasoning: season with salt and pepper and simmer for another 2-3 minutes. It’s ready!
Cabbage soup
Cabbage soup, made famous by the film of the same name with Louis de Funes, is still a safe bet. Here is a very special recipe that will delight your taste buds.
Ingredients for 4 people: 1 green cabbage, 3 potatoes, 1 vegetable broth, 4 thin slices of bacon, 3 carrots, 1 large onion, 2 tbsp. tablespoons of olive oil, salt and pepper.
Recipe: Peel potatoes, carrots and onions. Cut them into pieces. Rinse the cabbage and cut it into pieces. Heat olive oil in a pot. Fry the onion for a few minutes. Then add broth and potatoes, carrots, cabbage, salt and pepper. Cover and bake for 50 minutes.
At the same time, grill the bacon slices on both sides in a dry pan. Mix the soup with a blender and adjust its consistency according to your taste, adding a little water if necessary. Serve with grilled bacon slices.

Jerusalem artichoke
More original, the earthen bulb will surprise you. This vegetable tastes very good in soup, with its strong and autumnal flavor.
Ingredients for 4 people: 1 large onion, 400g of earthen pear, 1 chicken broth, 2 cloves of garlic, salt and pepper.
Recipe: Peel the onion. Chop it up. Fry onion and garlic in butter. Peel and roughly chop the Jerusalem artichoke. Put them in a saucepan and cover with water. Add chicken stock, salt and pepper. Leave to cook for about 20 minutes.
When the potato is soft, mix everything together. Check the seasoning and simmer for another five minutes.
