Cream of broccoli

Very soft and so greedy velouté that we will definitely have more (if there are any left)!

When the temperature drops, soups and veloutes are our best allies to enjoy! There is almost nothing to do and in a moment we can warm up our taste buds while enjoying. Proof with the creamy soup of the day: thanks to this recipe, even children love broccoli. You can also enjoy a more autumnal velouté with mushrooms or the incredible sweetness of parsnip velouté. Broccoli soup recipe


  • 3 shallots
  • 2 tbsp. olive oil
  • 500 g of broccoli
  • 3 potatoes
  • 1.5 liters of vegetable broth
  • 4 tbsp. heavy cream
  • salt pepper



Peel and chop the shallot. Sweat them in a large pot with olive oil.


Add broccoli florets and peeled and roughly chopped potatoes. To mix together.


Pour in the vegetable broth and cook on medium heat for about 30 minutes. Check the doneness of the vegetables with the tip of a knife, it should sink in easily.


Blend until smooth and add heavy cream and blend again.


Season with salt and pepper and serve immediately!
