BARLEY AND BEEF SOUP
Serves: 4 – Preparation: 10 minutes – Cooking: 65 minutes
Ingredients
454 g (1 lb) beef stew, cubed
1 onion, chopped
60 ml (4 tbsp) olive oil
2 garlic cloves, chopped
250 ml (1 cup) chopped carrots
500 ml (2 cups) button mushrooms, diced
15 ml (1 tbsp) tomato paste
250 ml (1 cup) blonde beer
125 ml (1/2 cup) hulled barley
1.5 L (6 cups) beef stock
15 ml (1 tbsp) maple syrup
15 ml (1 tbsp) Provencal herb mixture
15 ml (1 tbsp) mild smoked paprika
30 ml (2 tbsp) butter
125 ml (1/2 cup) cheddar cheese, cubed
Salt and pepper to taste
Preparation
STEP 1
Brown the meat and onion in oil in a large saucepan for 2-3 minutes.
STEP 2
Add garlic, carrot, mushrooms, tomato paste and fry for another 2 minutes.
STEP 3
Deglaze with beer.
STEP 4
Add barley, stock, syrup, Herbes de Provence, paprika, cover and cook for 1 hour on medium heat, stirring occasionally.
STEP 5
Mix in the butter. Check the seasoning.
STEP 6
Serve with cheese cubes.
