3 Weight Watchers-inspired mini-calorie, gourmet, and comforting meal recipes

Having fun eating with delicious and gourmet yet light recipes is sometimes difficult. Here are 3 recipes I learned while doing Weight Watchers (or WW) and still love.

Making Weight Watchers, or WW as it is now called, is not “to diet”, contrary to what many people imagine. This is actually intelligent food balancing. Such awareness of the true caloric and nutritional value of food leads to a slow and controlled weight loss. But stable. The main thing about a balanced diet is that the concept of pleasure to preserve. Get out restrictive diets which prohibit types of food, drastically reduce amounts, or even limit the time periods of eating. Of course, they are often effective, but dangerous to health, which can lead to significant deficiencies. And weight regain is often greater.

I hit WW in 10 months in 2020 and 2021 and lost 40 lbs. I learned to cook again and discovered many delicious recipes that count few points (only the real ones know), including calories. These are the ones that made me, my loved ones and I happy and that I still make.

My easy chili con carne

A very classic and well-known recipe, Chili is a delicious dish that tastes really good. It also cooks very quickly and can be made in large quantities for those who are fans of batch cooking. For my Light Chili Con Carne recipe (for 4 or 6 people depending on the side dish) you will need:

  • 200 g minced meat 5% fat
  • 2 large onions and 2 cloves of garlic
  • 2 cans of 400g peeled tomatoes or crushed tomatoes
  • 500 g of boiled red beans
  • 1 small can of corn,
  • 2 peppers
  • Chili spices.

Brown the meat in a non-stick pan with finely chopped onion and garlic. Add diced peppers (without skin for those with digestive problems). Then add tomatoes, then beans and corn. My wok of pasta with green vegetables and pesto

Who doesn’t love a good pasta dish? The trick here is that the dough is the binder of the dish, but not the main ingredient, to lighten the calorie count a bit. This dish can be prepared with 2, 3, 4 or 5 types of green vegetables, according to your taste and preferences. To make it for 4 people you will need:

  • 1 head of broccoli
  • 2 large zucchini
  • 300 g of extra fine peas
  • A large handful of green asparagus
  • Pesto alla genovese
  • grated parmesan
  • 200 g wholemeal penne or farfalle pasta
  • 2 cloves of garlic

Boil the pasta and set aside. Brown the broccoli cut into florets in a large wok with a spoonful of olive oil and chopped garlic. Add only thickly sliced and halved zucchini (for the aesthetic side). Then add the pre-cooked and chopped asparagus, then the peas. Fry everything with a spoonful of salty soy sauce if you don’t like the bitterness of broccoli, and oregano to taste. Add the cooked pasta to the wok. Serve immediately hot with a teaspoon of pesto and a generous pinch of parmesan. This dish can also be prepared as a non-vegetarian version with freshly cooked salmon fillet.

My chicken with tarragon and lentils

Another simple and delicious recipe, chicken with tarragon. A comforting and energizing dish, ideal for example before a sports session. Since tarragon is a strong flavored herb, it is recommended that you ask your friends if they like it first when making this dish. To make this tarragon chicken for 4 people you will need:

  • 300 g chicken strips
  • 500 g of extra fine green beans
  • 1 brick light crust
  • 2 glasses of green or coral lentils according to your preference.
  • Fresh or dried tarragon, 2 tsp

Boil the lentils and set them aside. Brown the chicken in a non-stick pan with a tablespoon of olive oil. When the chicken is cooked but not browned, add the tarragon and heavy cream. For a little spice, add a tablespoon of strong mustard to the cream and mix. Simmer for a few minutes, then add the already cooked green beans. Pour the mixture into a deep plate containing a portion of lentils, add a spoonful of sauce and enjoy hot!
